“Il Gattopardo” Cook in the Castle - 1 day Tour “Cook in the castle” is a fabulous cooking class held in a very special location. The Earl Dario del Bufalo welcomes guests at his exclusive Medieval Castle located in the city of Rome. Dario is a great host and one of the most respected ancient art experts in Italy. He will guide you around his beautiful property talking about History and Food with Claudia an ingredients expert and sommelier. Claudia will show you how to buy fresh products from local markets to make the best traditional Roman dishes or an ancient Imperial Roman menu. The cooking class and lunch are held in the main Popes (Pope Paolo V, Pope Leo XII) apartment of the Castle, which is decorated by the painted Annibale Durante in 1615 and surrounded by majestic views. “The Lake Tour” Nearby rome - 4 day Tour Located less than one hour north from the eternal city, Lake Bracciano is one of the most amazing natural sites in Lazio. Famed since Etruscan times, this volcanic formation has a 35 Km circumference hosting some of the most enchanting attractions in the region. Castles, Medieval villages, fishing boats, archaeological excavations and forests are all there to be enjoyed. On this tour, we will go hunting for very special food over a 4-day programme. Guests will meet locals, buy the best fresh and organic produce and cook together back at the enchanting Villa Clodia. The 18th century villa has 11 very elegantly furnished rooms and a stunning view over the lake. The Pontine Archipelago is just a few hours from Rome and is another of Mother Nature’s jewel found in Lazio. Not many people get to experience this untouched paradise that is resting just few miles off the coast of Rome. My love for the sea has inspired me to organise an amazing tour that will surely find a place in your heart! Four days spent on Ponza cooking, touring, relaxing, fishing and swimming in crystalline water will ensure you a special experience. When in Rome do what the Romans do…. Here on Ponza we do not miss a trick, visiting places and sites that are usually the reserve of the locals. Stunning and authentic Ponza will host our cooking vacation in one of her most esteemed 4 star hotels - the Grand Hotel and Spa Santa Domitilla. After a morning spent shopping in the local market and grocery shops, it is time to learn Mediterranean culinary secrets. Meet up in the afternoon for the welcome drink and course presentation. Meet the local fishing boats arriving in the early evening at the port to choose our fish. Dinner in our amazing restaurant “Gennarino a mare” with wine and beverages included. Overnight stay. Day 3 Day 2 Breakfast. We will spend the morning around the little town of Ponza searching for produce to cook. A light lunch at the hotel restaurant or in one of our suppliers’ shop according to the season. Time to relax; why not use your spa credit? Late afternoon first hands-on cooking class in the hotel kitchen - fish, pasta and baking. Dinner on our efforts with selected wines and beverages included. Overnight stay. Boat trip around the archipelago (depending on the weather) or a visit to a local farm. Lunch and the second hands-on cooking class either on the boat or on the farm. Afternoon back at the hotel to relax, why not use your spa credit? CLAUDIA PAIELLA Born and raised in Rome, I am the 3rd of 3 sisters, 1 mum, 4 aunties and 2 nieces. In my family, the female side has never been shy. My dad runs one of the oldest wine shops and restaurant in Rome so making my own professional path in food and wine a natural choice. I spent 5 years in one of the most famous hotel and catering colleges in Italy and after college, I studied wine with the National Sommelier Association to make sure dad would have a few respectable bottles in the shop. Moving up I attended Wine Master School, which was one of my life’s highlights, until my older sister move to Australia, where she opened a very stylish Italian bistro. I took the chance to gain some experience abroad and lived in Sydney for 2 years working for the biggest fine food importing company. My job involved traveling around the world looking for luxury products to import like truffles, fresh mushrooms, caviar, selected wines and other food delicacies. Now, I’m back home and I feel like I need to connect all the points as Steve Jobs said in his famous speech at Stanford University. I love wine because I was born in a wine shop; I love food because I’m an excellent cook and even better eater; I love hosting as my entire life is about welcoming people. And... Here I am connecting all my points to give all my passion to the project of my life! 19
