Why Filter The Water To Coffee Machines? THE FACTS YOU NEED TO KNOW Coffee and other hot drinks are 98% water. Using filtered water is not only critical for achieving a great taste, but also critical in being able to duplicate that taste every time. Filtered water preserves brand quality and extends equipment longevity. Maintenance costs are reduced by preventing scale build up which causes pitting on piping, solenoid valves, groups heads and heating elements inside your machine. Chlorine & Chloramine in drinking water is a taste killer to coffee. By filtering out these contaminates from the water your coffee will improve in taste and best of all will keep your customers coming back for more. »» PH LEVEL A neutral pH of 7 is ideal although between 6.8 and 7.3 is considered acceptable. Our filters do not alter the pH level of the water. Australian tap water is generally between 6.8 - 7.3. »» ALKALINITY LEVEL The ideal is 50mg/l with a range of 50-60mg/l. The water will generally be in this range if the pH is neutral. Reverse Osmosis water is not recommended due to it producing very low alkalinity water. »» SEDIMENT REMOVAL It is best to remove as much sediment as possible for appearance, taste and machine protection: generally 1 micron absolute or less is required to remove fine silt and other suspended organics.

Water Hardness As many coffee lovers are aware, water hardness kills coffee machines through scale build up. However water hardness is also required as hardness helps the coffee bond to the water and therefore is necessary for the best flavour. So on one hand you need to stop water hardness damaging your machine but you also need to keep it in your water. The majority of cities in Australia have a low water hardness level, making the use of water softeners & resin filters unnecessary, as these filters are designed for water conditions in Europe & America with high hardness levels. The most efficient method of preventing water hardness on coffee machines in Australia is to treat the water to prevent the chemical reaction causing scale & pitting. This way the water retains the hardness & its benefits and stops damage to equipment. Optimal water hardness for coffee making is between 80 - 100 ppm. Most major Australian cities are below 60 ppm. Point Of Entry System One Filter for all applications Water is required in so many commercial applications, filtering the water at individual appliances is not always not cost effective and requires more effort to manage. With Point of Entry Systems you can supply the entire cafe with filtered water ready for use in coffee machines, ice machines, drinking water, preparation water and smoothie machines. All of these point of use systems add up and filter costs become far more expensive than a single point of entry filters. Drinking Water Tap water contains many contaminates. Filtered water tastes better & is also better for your health. Coffee Machines Use on average about 10,000 - 15,000 Litres per year of water, based on 10 kilos of coffee per week. Most filters require changing every 6 months or less depending on usage. What Is The Ideal Water Quality for Coffee? We asked this question to some of the world’s foremost coffee experts, some of the world’s biggest roasters and some of the world’s largest coffee machine manufacturers. Although there was some variation in the range of parameters they all agreed on the ideal or optimum water quality parameters. These parameters were based upon town water treated to potable water standards. This is what we found. »»Sediment It is best to remove as much sediment as possible for appearance, taste and machine protection: generally 1 micron or less is required to remove fine silt and other suspended organics. »»Total Hardness This is one of the most important parameters for coffee taste and machine performance. The optimum hardness for coffee taste is 90mg/l with a range of 80150mg/l considered acceptable. While this level maybe best for coffee taste, the coffee machine itself needs to be protected from scale build-up associated with this level of hardness. When the water temperature is raised over 95°C hardness in excess of 90-100mg/l is dropped out as scale. The majority of cities and towns in Australia have average hardness levels well under this optimum level; Canberra average 40mg/l, Sydney 14-75 mg/l, Brisbane 93-123mg/l, Melbourne 15-40mg/l, Perth 100mg/l. The majority of country towns in NSW, VIC & SA average 40-80 mg/l. In most cases within Australia it may be best not to remove any hardness from the water, but instead protect the machine from scale build-up and damage. In cases where reduction is required only a small percentage may be necessary which is normally done with resin media. However, this does not then protect the machine from the remaining hardness. A different technology or combination of technologies maybe required. The majority of water filters currently on the market are designed for US and European hardness levels that are far in excess of those in Australia. »»Chlorine / Chloramine and other chemicals Chemicals such as chlorine have the greatest effect upon coffee taste. A high quality suitably sized carbon filter is required to remove chlorine and other chemicals from the water to maintain a consistent water quality from hour to hour and day to day. As you may be aware chlorine and other chemicals in the water vary in concentration throughout the day and from day to day. (Tea quality is dramatically reduced when chlorine is present in the water) »»PH Level A neutral pH of 7 is ideal although between 6.8 and 7.3 is considered acceptable. Water that is filtered through reverse osmosis or membrane filtration will have a low pH between 4.5-6.0. The more pure the water the lower the pH and the more acidic the water becomes. »»Alkalinity The ideal is 50mg/l with a range of 50-60mg/l. The water will generally be in this range if the pH is neutral however if the pH is low and the water is treated by Reverse osmosis or similar the alkalinity will also generally be low.

Water Hardness Water hardness creates a major problem in coffee machines due to scale build up. Treating water hardness is a must for commercial machines as scale will drastically shorten the life span of the machine and result in expensive service calls. Water hardness in Australian needs to be treated not removed as the majority of Australian tap water is lower than the ideal water hardness for coffee making. Water Hardness Level The level of hardness can be different from suburb to suburb. One filter may work fine at one cafe but won’t be effective in another suburb. Checking the water hardness level is important so that your coffee machine is adequately protected. When filtering water the aim is to remove contaminates present in the water to improve the quality. The smaller the micron the more contaminates will be collected in the filter. A ten micron filter will let any particle smaller then ten microns pass right through it along with many between 10-20 microns. For most commercial applications 5 micron is the upper limit that you should use with 1 micron and below preferred. Aqua Safe systems remove a number of contaminates from your water. The SMF range remove down to 0.5 of a micron providing optimal water quality for coffee machines. The finer the filtration below 0.5 microns, the more acidic the water becomes and teh greater the impact on the coffee taste. Aqua Safe does sell Reverse Osmosis water filtration systems however we would not recommend them for the Coffee industry.
