let me tell you about my family they are nuts say what you want about me but if you think i m crazy you should meet my sister we come from a strange mix of irish cherokee english japanese and filipino we range from ivory white to red neck to yellow and caramel in color we are loud we are demure we are business minded we are certifiably insane but one thing that runs in the blood of the whole brood is the tight bond of family miles and distance keep us separated years go by without saying a word but when we think of home we think of our family and the memories we have shared with these crazy people that we call our own we are by no means perfect our family is fractured and splintered into pieces we in no way represent the norman rockwell vision however what we have together is stronger our family experiences have made us into people that have a limitless supply of love and empathy and that is what i am most proud of not all of you had the great luck to meet my grandmother and spend time with her granny was an incredible woman i really can t tell you about her education or even her upbringing as i was only a child when she passed away but what she gave to me as well as my father my aunts and my cousins was a deep respect for family and unconditional love she was a strong woman with a good sense of humor and the biggest heart of anyone i ve ever met she never drove a car she got caught with my aunts stealing watermelons when they got stuck in the farmer s field and she made the best german chocolate cake you ve ever put in your mouth i had a psychic once in the early `90s tell me that i had a spirit watching over me and that her name was pauline i never doubted that for a minute i guess the point i m trying to get to here is that although we can t be together we are all family no matter how distant no matter how long we ve been apart and i wanted to share with you some of the comfort foods that i grew up with and some of the food that i would cook for you if you were here that s what granny would have done fed you so as the kids keep getting older and going off to college and into their careers i hope we can all share our family recipes so there s always a piece of home ready and waiting for you on your table no matter where you are i love you guys recipies from the hibbitts family 2011

bacon biscuit cups 1 8 oz pkg cream cheese softened 2 tbsp milk 2 eggs 1 1/2 c shredded cheddar or colby cheese 5 slices bacon crisply cooked and finely crumbled 1 can refrigerator biscuits salt pepper everglades seasoning/mrs dash to taste scallions chopped add half to cheese mixture half for decoration/presentation heat oven to 375 degrees grease 10 muffin cups in small bowl beat cream cheese milk eggs and seasoning on low speed until smooth stir in cheddar cheese bacon and ½ of green onions set aside separate dough into 10 biscuits stretch out like mini pizzas about 5 diam place 1 biscuit in each greased muffin cup firmly press in bottom and up sides forming 1/4 inch rim spoon about 2 tablespoons cheese mixture into biscuit cups bake at 375 degrees for 21 to 26 minutes or until filling is set and edges of biscuits are golden brown sprinkle each with the remaining bacon/scallions lightly press into filling remove from pan makes 10 servings coco hibbitts 4 recipies from the hibbitts family 2011

biscuits and gravy 1 pkg jimmy dean spicy bulk sausage pepper to taste 2 cups of milk more or less 1/4 cup flour optional spices a few drop of worcestershire sauce everglades or mrs dash seasoning chicken boullion biscuits i use the frozen pillsbury ones in the bag not flaky buttermilk best bake biscuits according to package directions brown the sausage and use a fork to really shred it up so there are no big chunks once the sausage is browned do not drain the fat turn the heat down and add two tablespoons of flour and any optional spices into the sausage/fat mixture stir constantly you are essentially creating a sort of roux this will go pretty quickly and get pretty sticky just cook it enough so that the fat is absorbed into the flour and the meat is covered at this point add in the milk stirring constantly bring the heat back up to a boil activating the flour/roux to thicken the mix once thickened turn the heat back down to a low simmer while the biscuits brown add more milk or flour to get the consistency you desire serve over split biscuits coco hibbitts modified from ed hibbitts recipe recipies from the hibbitts family 2011 5
